Tirokafteri (Feta Dip)

This particular dip does not necessarily have to be smooth. If you prefer a chunkier dip, just pulse gently or even mix everything together using a fork.


1 red bell pepper
2 long chillies with the seeds
3 cups good-quality feta
¼ tsp freshly ground white pepper
½ cup of ricotta
½ cup of olive oil
1 tbsp red wine vinegar
salt (to taste)
chilli flakes or chilli powder (to taste)
olives and bread (to serve)


  1. Preheat your griller and grill the bell pepper and the chillies until they blister. Peel them, and drain to remove excess liquid. Once drained, place them on paper towels.
  2. In your food processor, add the feta with the bell pepper, chillies, pepper and ricotta. Gradually add all the olive oil and vinegar until it is nice and smooth.
  3. Taste to see whether the dip needs any salt. This will depend on the flavour of the cheese.
  4. This dip is intended to be spicy, so if the chillies are not hot enough, add a few chilli flakes or a pinch of chilli powder.
  5. Serve in a bowl with olives and bread.
