Sip on Love: Rhubarb Mule Recipe for a Romantic Valentine’s Day

Ice 1½ oz (45 mL) vodka
2 slices of cucumber
1 oz (30 mL) rhubarb juice (recipe below
½ cup ginger beer


  1. Fill the glass 2/3 of the way with ice. Add vodka and cucumber.
  2. Add the rhubarb juice and stir. Top with ginger beer.

Recipe for Rhubarb Juice


1 quart (1 L) jar
6 cups water
5 cups chopped rhubarb
2 vanilla pods
2¼ cups cane sugar
Lime juice (optional)


  1. Bring the water, rhubarb, and vanilla pods to a quick boil. Turn down the heat and let simmer for 10 minutes. Remove the pan from the heat and let sit for 30 minutes.
  2. Pour the juice through a strainer into another saucepan and add the sugar. Let it boil until the sugar is dissolved. Add lime juice (optional) and extra sugar to taste.
  3. Let the juice cool slightly before putting it in a hot glass bottle.* Store in the refrigerator.
  4. When serving, mix the juice with water at a ratio of 1 part juice to 3 parts water.
  5. *The glass bottle can be rinsed first with sodium benzoate if you choose.
