Pink Lemonade Recipe

Makes 11 cups

Try Jessica Schacht’s Pink Lemond Recipe from her book The Five-Bottle Bar. The lavender infusion in this recipe makes the lemon juice turn a beautiful cloudy pink! Which is good because it looks like a muddy mess before that. Just trust in the process, and all will be well.

INGREDIENTS

2 cups boiling water
3 Tbsp dried lavender, more for garnish
1 cup fresh lemon juice
1 cup sugar
8 cups cold water

RECIPE

In a covered saucepan or teapot, steep the lavender with the boiled water for 15 min-utes. Become slightly nervous as the infusion turns the colour of grey mud and think, Where have I gone wrong? Strain out the lavender flowers through a fine-mesh strainer into a large bowl, and add the lemon juice. Be amazed as it turns a gorgeous shade of pink. Add the sugar and stir until it dissolves. Add the rest of the water, and chill it down for at least an hour. Serve in a glass over ice. With a couple lavender buds if you’re fancy. Which, I hope we’ve established by now, you are. Regardless.
