Chicken with Pearl Barley

5 oz bacon
1 small handful fresh mint, or to taste
1 small handful fresh chives, or to taste
2 chicken breasts
A little oil for frying
2 stalks rhubarb
1 onion
1¼ cups pearl barley
2 tsp ground ginger
1¼ cups + 3 Tbsp white wine
1½ cups vegetable broth
1/3 cup cream
Salt and pepper


  1. Cut the bacon into cubes and fry in a pan until crispy. Roughly chop the mint and chives and mix with the bacon. Set aside.
  2. Cut the chicken breasts into smaller pieces and sauté briefly in a large pan with a bit of oil over high heat, until they acquire a crust.
  3. Cut the rhubarb into 1½ inch pieces. Peel the onion, then halve and cut into thin slices. Put the pan on medium heat and add the rhubarb, onion, pearl barley, and ground ginger, and sauté briefly.
  4. Add the white wine and reduce for 10 minutes. Add the broth and cook for another 15 minutes. Add the cream and let simmer until combined. Season with salt and pepper.
  5. Sprinkle the bacon and herbs over the finished pearl barley and serve the dish immediately.
