Enjoy this recipe for Halva from Sweet Greek by Kathy Tsaples.

INGREDIENTS

Syrup
1 stick of cinnamon
10 cloves
4 cups of water
3 cups of sugar

Cake
½ cup of grapeseed oil
1 tbsp butter
2 cups of coarse semolina
1 cup of walnuts, roughly chopped

RECIPE

  1. In a medium saucepan, bring all the syrup ingredients to a boil. Allow to simmer for 10 minutes to bring all the flavours together.
  2. In another pan, heat up the oil and the butter. Once the butter has melted and stops bubbling, add the semolina and walnuts and continue to stir until the semolina takes on a light golden colour. This does take a while, but be careful not to burn it.
  3. Remove the pan from the stove. Pour in the syrup and keep stirring. You need to be very careful because the mixture will bubble and sputter. Once all the syrup has been absorbed, put the pan back onto the flame and cook until the Halva easily comes off the sides of the pan.
  4. You can pack the mixture into a Tupperware mould, or lay it out in a baking tray and cut it into diamonds. Enjoy the Halva with a nice cup of coffee.
